The Beginning

Welcome to my first blog, and the adventure of a lifetime.  France!  France has been a destination I've dream of for more than ten years.  Pastries are my life, my world, and I have never been more excited and even nervous to embark on this amazing opportunity.

This dream began last year when the details and application process finally was released for the ENSP program.  First was an information session, followed by filling out the application, which included an essay about myself and why I should be selected for the program.  Next I created a portfolio, and then the interview.  ACCEPTED!  Buying the flight, plotting and planning trips, working out the details including my roommate, and slowing packing.


Ah packing, the single job holding me back from leaving, a daunting task, finally completed.  Once packed, saying goodbyes are the hardest.  Packed up the car and drove to the airport.  Saying goodbye to my mom at security is always my moment of sadness.  Bags
